Mocha is one of the most confusing terms relating to coffee. Arabian Coffee exported through the port of Mochawas so popular that soon all coffee through the port became known as Mocha. Yemen coffee has a famed chocolate aftertaste which has over the years made the name synopsis with chocolate. Yemen Mocha, next to its neighbor Ethiopia is one of the oldest coffees and one of the best. Mattari from the northern region represents a more acid, wine like version of Mocha, whereas Sanani from the southern region is lower- toned and a more balanced bean. Mocha is unique, sharp, rich, with a medium body and chocolate overtones. Seedlings, grown in nurseries, are transplanted to terraced farms (from 3,000 feet to 7,000 feet), which have been carved out of the steep hillsides. Lack of rain necessitates the maintenance of irrigation systems designed to provide the trees with controlled constant moisture. The relative dryness of the soil and air results in the production of a bean that is small and extremely hard. Mocha Sanani and Mocha Mattari make up about 35% of the annual crop and are regarded as the finest of the Yemens. Yemen’s entire tiny crop is processed by the dry method, and much of it, in fact, is permitted to dry on the tree before picking and hulling.
